Time For A Little Rinse
Kick things off by placing the Kalita Wave filter in your dripper and giving it a good rinse. This wipes out any paper taste and warms everything up.
Weigh and Grind
Once you’ve rinsed, toss that water from your carafe or mug. Now, let’s get to the good stuff! Grab 21g of coffee (that’s about 3 tablespoons) and grind it until it feels like table salt. Pour it into the filter, making sure it’s all nice and flat. Put the Kalita Wave on top of your carafe or mug, and don’t forget to zero out your scale!
Saturate the Grounds
Now for some magic! Pour 60g of hot water (straight from the boil, around 205°F) over those dry grounds within the first 10 seconds to get everything blooming. Watch as the coffee bed puffs up and bubbles. Give it a gentle stir with a spoon to mix things up.
Round Two
At 45 seconds, it’s time for round two! Pour water in a spiral until you hit 200g by the 1 minute mark. This swirling action helps ensure an even extraction and keeps all those flavors mingling together.
Pulse and Wait
Keep the party going by adding small amounts of water (25-50g) every now and then until you reach 375g by the 2-minute mark. Dive into those dark spots while steering clear of the light ones, slowly filling the water level for that perfect extraction.
Cheers!
You’re almost there! By 2:45 to 3:00, your brew should be around 300ml, just about filling a 10oz mug. When you’re done, lift the Wave off the carafe or mug and let it chill in the sink while the last drops make their exit. Cheers to a delicious cup!
